ORANGE CHICKEN
Ingredients for........
ORANGE SAUCE
- 3 t. soy sauce
- 3 t. water
- 10 t. white vinegar
- 6 t. sugar
- 1 t. orange zest
Mix all ingredients together in a separate bowl,and reserve to use with the preparation of the chicken
CHICKEN
- 2 lbs. boneless chicken chopped into bite-size pieces
- 1 egg
- 1 tsp. soy sauce
- 3/4 tsp. salt
- pinch of white pepper
- 1/2 c.=1 t. cornstarch
- 1/4 c. flour
- 1 t. ginger-root , minced
- 1 tsp. garlic ,minced
- 1/2 tsp. crushed red hot chilli pepper
- 1/4 c. green onions . chopped
- 1 t. rice vinegar
- 1/4 c. water
- 1/2 tsp. oil
In a bowl, stir in egg ,salt, white pepper, 1 t. oil. To add the chicken pieces and mix well. In another bowl , stir in 1/2 c. cornstarch and flour together . Coat chicken pieces with this mixture . Heat oil in a wok .Heat the wok and add 1 t. oil. Add ginger and garlic and stir fry for 1 to 2 . Add and stir fry crushed chillies and green onions . Add rice and vinegar and stir a couple of a seconds. Add orange sauce and bring to boil . Add the fried chicken , stirring until well mixed . Mix the 1 t. cornstarch and water until smooth , and add this to the chicken. Heat until the sauce is thickened . Add the orange zest . Turn off the heat and serve!
